Cook/Dietary Job Description
The objective is to provide the highest quality, most nourishing, appetizing meals for our residents.
Requirements:
1. Must be able to read and follow directions accurately.
2. Should have experience in preparing meals for large groups
3. Assumes responsibility for preparation of all foods served in the facility, following standard recipes and special diet orders
4. Must be able to determine amount and type of food and supplies required for daily menus.
5. Must be responsible for maintaining sanitary conditions in all food preparation, food storage, kitchen and dining areas, and assure that personal hygiene and health standards are met by helpers.
6. Must wear clean uniforms and hair nets.
7. No sandals or slippers are allowed.
8. No smoking in kitchen.
Duties
1. Plans food preparation to coordinate with established meal times so that excellence, quality, temperature, and appearance of food is preserved.
2. Prepares or directs the preparation of all food served in the facility, following standard recipes, special diets orders, and modifying daily menus to fit residents’ specific dietary needs as prescribed by physicians.
3. Prepares meals in accordance with established menus and plans use of leftover food.
4. Determines type and amount of food and supplies to be ordered, checks incoming merchandise, and stores or directs storage of these items.
5. Is responsible for scheduled cleaning duties of the kitchen and dining areas and equipment.
6. Assures that daily service areas are stocked with necessary glassware, dishes, condiments, snacks, and juices.
7. Maintains proper storage of all foods by sealing and labeling (date and description) items before placing in refrigerator/freezer or dry storage.
8. Checks and maintains proper temperatures in refrigerators and freezers.
9. Is familiar with and maintains precautionary measures as listed in Fire and Emergency Manual.
10. Reports repair and maintenance needs to maintenance staff and/or Administrator.
11. Performs other duties as directed by Administrator.
